- Is there a Nagoya curry?
- The city has a taste for heat — the same instinct behind Taiwan ramen — so chilli-forward curry has taken root here. Curry udon is strong too, and some shops build it on a soybean-miso dashi.
- Does curry udon count as Nagoya-meshi?
- It is not on the canonical list, but it sits right next to the miso-nikomi tradition, and plenty of udon shops serve a dashi-based curry udon.
- Can I choose the spice level?
- Usually yes. But the scale differs from shop to shop, so start mild on a first visit.
