Aichi raises Nagoya Cochin, so its yakitori counters start with better chicken than most of Japan. The good ones grill over binchotan charcoal and send skewers in the order the chef decides.

- What is different about Nagoya Cochin yakitori?
- Firmer bite and deeper flavour — and a higher price. Shops using Cochin and shops using ordinary chicken sit side by side, so read the menu.
- Is this the same as tebasaki?
- No. Tebasaki is a Nagoya original — wings deep-fried then glazed. Yakitori is skewered and grilled. Many izakaya serve both.
- How many skewers should I order?
- Five to eight per person is normal. Start with an assortment, then re-order what you liked — the safest approach.
